Notes on chocolate: sheer luxurious indulgence

Is it time for champagne? I feel it could be. I at all times used to get excited by Charbonnel et Walker’s Marc de Champagne truffles, £16/135g, which had been half pudding, half chocolate. However London Goodies champagne truffles are a brand new favorite with smarter, for me, credentials: single-origin Tanzanian cocoa, Taittinger champagne and a little bit of cognac, all in Jersey cream, £18/250g. A gorgeous, clear snap to the darkish chocolate with a sensational centre. Very grown up.

Pump Road’s new 44% single-farm Togo Swiss Milk, £6.25/70g, is a gold-star bar, which has grow to be my new favorite from Pump Road (which I consider as my native chocolatiers since we're each in Suffolk). With beans from Togo, the primary time Pump Road has used cocoa beans from Africa, and from a small co-operative of 100 smallholders. It’s received that pretty, creamy, treaty milk chocolate style that all of us want in February.

Lastly, Palm Chocolate are all date/nut-based, with no refined sugar.
